  • 300g of beef fillet tails
  • Smoked Maldon sea salt
  • Cracked black pepper

For Crust

  • Dijon mustard
  • 10g of chopped tarragon
  • 10g of chopped chervil
  • 10gof chopped chives

For Salad

  • 50g of baby watercress
  • 1/2 a packet of micro rocket
  • Olive oil

For Sauce

  • 75g of crème fraîche
  • 5g of chopped parsley
  • 1 teaspoon of whole-grain mustard
  • 1 teaspoon of clear honey
  • 1/4 lemon

Garnish

  • 50 ml of sweet balsamic
  • Parmesan cheese shavings
  • Fresh black truffle shavings
